Lemon Poppy Seed Salad Dressing

Poppy seeds provide a tasty crunch to this dressing. The seeds are so tiny that they disperse evenly throughout a salad and add a little crunch to each bite.

¼ cup sugar

¼ cup lemon juice

¼ teaspoon Dijon mustard

¼ teaspoon salt

⅛ teaspoon onion powder

⅔ cup extra-virgin olive oil

½ tablespoon poppy seeds

To a small bowl, add sugar, lemon juice, mustard, salt, and onion powder. Whisk to combine. Add oil in a slow, steady stream, whisking constantly, until mixture is thick and smooth. Add poppy seeds, and whisk further to combine. Serve immediately or refrigerate for up to 5 days.
